Chickpea Salad

Ingredients:

1 can of chickpeas

2 cups of chopped green pepper

2 cups of diced celery

2 cups of diced onion

2 cups of diced grape or cherry tomatoes

2 cups of diced mini carrots

1/4 cup of sesame seeds

Dressing:

6 Tbsp of lemon juice

4 Tbsp of olive oil

3 Tbsp brown sugar

2 tsp of cumin

1 Tbps of curry paste or powder

1 Tbsp of dill

2 tsp of minced garlic

Method:

Cut all vegetables to same size as chickpeas.

Mix dressing and pour over the vegetables.

Cover and refridgerate for an hour (overnight is best). Enjoy!
